. All the Beef and Pork I sell is grown and processed by Montshire Farms( formally named P.T Farm) in North Haverhill ,NH . The farm was sold but is in good hands and so far the quality of the meat has not changed, still locally raised, produced and processed. I am getting 10-13 1/2 dozen eggs a week but I am boxing them as unsized only at $6.00 a dozen.
I have been busy canning...with fewer sheep I have more time to spend in the canning kitchen. I have made lemony Blueberry Lavender Marmalade, Winter Pear and Apricot Jam,summer Strawberry jam,Raspberry Blueberry & Citrus jam. In the lower sugar category I have Triple berry jam and Stone Fruit & Citrus jam. I have had two recipes that have failed to set, but I will give them time,reprocess them or change them into fruit sauces. It is hard working with the fruit from the freezer as it looses some of it's moisture and many of the ingredients I use as setting agents(apples,lemons and oranges) don't have the same potency as they do during the growing season. This is especially true with apples.. the lemons and oranges I can't control that variability!
